Marinated Fruit

This idea came to me and I thank the Lord because it is delicious! 


  1. 4-5 cups of assorted fruit (raspberries, blueberries, peaches, strawberries, kiwi)
  2. 1 bottle of Tazo peach green tea
  3. 2 Tb. to 1/4 cup chopped mint

Chop peaches, strawberries, and kiwi.  Put all the fruit, tea, and mint into a medium-sized bowl.  Stir and let marinate for 1-3 hours.

Top with low-fat vanilla yogurt and granola for a breakfast treat or put the fruit on ice cream for a cool, refreshing dessert!

There are many fruit and tea combinations so have fun with this recipe and get creative!

Greek Pizzas

I made these last night for dinner and they were delicious.  The quantity of ingredients depends on how big you want to make your pizzas! 


  1. White or whole wheat flat bread
  2. Hummus (whatever flavor you enjoy, I used red pepper and garlic-chive)
  3. Cucumbers
  4. Cherry Tomatoes
  5. Chicken Breast (I marinated them in Lawry’s herb.)
  6. Feta cheese

Warm flat bread in oven until it is crispy.  Cook or grill chicken breast until there is no pink.  Cut cucumber into thin slices and cut tomatoes in half.  Spread the hummus on the flat bread and top with cucumber slices, cherry tomatoes, and chicken breast.  Sprinkle feta cheese on top and enjoy!

Olives and red onions would go great on this pizza too!

Steaming Vegetables

Steaming vegetables is one of the healthiest ways to cook them but many times can be bland.  To make them tastier I would put butter on top but that adds fat and calories making me feel like I defeated the purpose of steaming them.  I recently tried a trick to get teh delicious buttery taste without adding lots of calories.  I Put some butter in the water I used to steam the vegetables.  It worked!  It adds the taste of butter without all the calories.  Yeah for science!

Cherry Brownies

Yesterday I made the brownie recipe on the back of the Ghirardelli unsweetened cocoa canister.  I substituted Cascade Farms cherry yogurt for the butter.  It was delicious.  =)

French Toast

I have never been one for real maple syrup.  I know, call me crazy but I think it has a funny taste.  I can’t eat pancakes or waffles plain though so I make fruit syrups.  I take berries (strawberries, blueberries, raspberries, and/or blackberries) put some (about a cup or so) in a pan with a little water and turn the heat on low.  The berries will become softer and turn into a wonderful topping for your favorite breakfast treat.  It is also great on ice cream, cakes, and breads.  =)
